Ridiculously Healthy Soba Noodles!
Today, my life has changed forever, for the better….for I have discovered Soba noodles! These are noodles made out of buckwheat - meaning they have more nutritional value of pasta and literally half the carbs! And they taste SUPER delicious and give you energy.
Using these magical little worms, I made a warm salad dish which tasted SO healthy, clean and fresh! And it was so quick and easy - Definitely adding it to my list of meals I ADORE.
So enough of my raving on about how good it is (but seriously…mmm) Here’s how to make it!
- Grab about 10 small cherry tomatoes and cut them in half. Arrange on a baking tray in the oven or on some alfoil under the grill. Sprinkle with salt, pepper and a bit of olive oil. Allow to roast for about 15 minutes.
- In the mean time, take a stack of soba noodles and put them into boiling water and allow to cook for 4 minutes.
- Pour out the hot water and quickly rinse with cold water from the tap (literally for 2 seconds). Your pasta should now be warm.
- Mix the pasta with your tomatoes when they’re done and add more salt, pepper and half a tablespoon of olive-oil. Garnish with a handful of chopped parsley and fresh green-peas!
